I personally believe that the future of UI design will include touch technology and voice recognition, much like what Tom Cruise uses to search through precog data in Minority Report. This amazing video found on the MacRumors site shows a demo of multi-touch screens being developed by a company called Perceptive Pixel. It's simply amazing--check it out.
